This Creamy Broccoli Avocado Soup recipe is comforting, delicious, and perfect for the entire family to enjoy.
I am a huge fan of soups but for some reason I never make them at home. I was reading a book about a kid with a cold to my 6 year old son the other day. He asked me if I could make him soup because he felt a little under the weather too. It was so cute, and I decided it was about time to start making my own. Voila! My Creamy Broccoli Avocado Soup was a big hit!
A cup of broccoli has more vitamin C than an orange, almost as much calcium as whole milk (in a more absorbable form), plus vitamins A, E and K.
It is so unfortunate but children are exposed to processed foods all the time. What they really need instead is healthy real food, especially leafy green vegetables. Kids need to eat vegetables everyday for their optimal development. This recipe is just a great way to incorporate ingredients their bodies really need!
Vegetables are the most nutrient-abundant source of food on our planet.
We usually buy cream of broccoli soup when we go grocery shopping at Whole Foods. My son really likes it also and so I thought: Why can’t I make it at home? Well, it was easier than I thought using my Vitamix, and the soup came out totally delicious. The combination with the avocado was just perfect. Another wonderful superfood to incorporate in this recipe.
An avocado has more potassium than a banana! Avocados are also a good source of pantothenic acid, dietary fiber, copper, folate, and vitamins B6, K, E, and C.
I am now excited to try it with other vegetables. I am thinking squash, corn, zucchini, or carrots. Yum! So many different combinations and so easy to make. I will keep you posted as I try new soup recipes and let you know what my favorite veggie combinations are.

As you can see the recipe uses simple, real ingredients. Broccoli, avocado, cheese, vegetable broth, and a little seasoning. You can make your Creamy Broccoli Avocado Soup in less than 30 minutes. For this recipe I used white cheddar cheese but you can substitute for your favorite kind. Same thing with your broth, I used a vegetable broth but chicken or beef will be fine too.
To decorate, you can place a couple of florets on top of your soup. Also depending on your taste, add more or less broth or cheese. Your soup could be thicker if using less broth if that is what you prefer.
Creamy Broccoli Avocado Soup
- 2 cups broccoli florets (cooked and chopped)
- 2 hass avocados
- 5 cups vegetable broth (about)
- 1 cup white cheddar cheese (you can use other types if you want)
- Salt and pepper to taste
- You need to cook (steam is preferred) the broccoli (about 5-7 minutes), drain and chop.
- If you have a high speed blender, place the broccoli, avocados, the vegetable broth, cheese, salt and pepper, and blend well.
- You can add a little more broth if the cream is too thick. Blend and test the texture. Depending on your taste you can make it thicker or thinner.
- I used my Vitamix in soup mode and it came out warm and ready to serve.
- If you are using a regular blender you will need to then heat it up in a medium pan until the cheese melts. About 5-10 minutes in medium heat.
- You can serve and decorate on top with a broccoli floret.
