Every morning I think of new healthy food options for my family.  Lately, I have been trying to come up with new homemade breakfast  ideas like my 2 Ingredient Sweet Potato Pancakes or Banana Oatmeal Pancakes.  This time I wanted to make soft cookies using quick oats, bananas for sweetness, and a little coconut oil.  They came out  perfect for breakfast or a snack.  They have soft banana bread texture in the shape of a cookie.

I have two kids and they are always asking for snacks. My five year old comes home from preschool hungry and dinner is not going to be served until later on. I need to have healthy snacks available all the time.  I am always trying to offer them homemade treats that are free of refined sugars and artificial ingredients. This Easy 3 Ingredient Banana Bread Cookies recipe took 5 minutes to prepare and about 12 minutes in the oven for delicious and sweet cookies my kids really loved.   I also added a tablespoon of coconut oil and boosted the nutritional value.  Ripe bananas,quick oats, and a good quality organic coconut oil .   • 2 ripe large bananas
  • 1 cup quick oats
  • 1 tablespoon coconut oil
  1. Preheat oven to 375 degrees.
  2. In a medium size bowl, mash the bananas and then add the oats and coconut oil.
  3. Mix everything together well.
  4. Using your hands, make little round balls and place them on top of parchment paper on a cookie sheet.
  5. Bake for about 12 minutes.
  6. Store in a closed container.
You can also add ¼ cup of chopped walnuts. *optional
