This is really an amazingly wholesome treat. You only need 3 ingredients and chocolate chips (optional) for this stress free baking recipe. The cookies came out super soft and totally delicious.  The kind of cookie that you need to eat 2 or 3 in a row.

Your kitchen will smell heavenly. There is nothing like the smell of homemade cookies coming out of the oven. Makes me feel cozy, comfy and happy. Yes, happy. These Easy 3 Ingredient Soft Almond Butter Cookies made me feel really happy.

I’ve been wanting to try a recipe using almond butter for a long time, and I thought it will be a good ingredient for soft cookies. Turns out almond butter is just perfect for cookies!

Easy 3 Ingredient Soft Almond Butter Cookies

Believe me: These cookies are so easy to make and taste AMAZING!

Almond butter is a great source of protein, fiber and healthy fats. Just a small serving of almond butter contains generous amounts of magnesium, potassium, Vitamin E, and iron. Make sure you buy a good quality almond butter.  I like the creamy version and with only one ingredient: almonds.

I also used coconut sugar for this recipe. Coconut sugar is a healthy alternative to traditional refined sugar. It is a natural sweetener. Coconut sugar has a lower glycemic index than regular table sugar and it actually contains some nutrients (vitamins, minerals and phytonutrients).

I only needed to mix the ingredients together with a big spoon and my hands. No mixer required!  I love sharing easy to make recipes because I believe simple ideas made with healthy ingredients are just the best.

Super easy to make 3 ingredient cookie recipe. Made with healthy ingredients.
Recipe type: dessert
Serves: 10
  • 1 cup almond butter
  • ⅓ cup coconut sugar
  • 1 egg lightly beaten
  • ½ cup chocolate chips (Optional)
  1. Preheat oven to 375 degrees.
  2. In a medium size bowl, place the lightly beaten egg, almond butter and coconut sugar. Mix well with a spoon.
  3. Add the chocolate chips (optional) and mix really well with your hands.
  4. Make little round balls with your hand and place them on a cookie sheet on top of parchment paper.
  5. Bake for 12-14 minutes.
  6. Let them cool down for a few minutes.
  7. Store in a closed container. I refrigerated my cookies and they turned a little firmer after a couple of hours. Makes 10 cookies.
