Love, love, love my Easy Healthy Roasted Sweet Potatoes recipe. They are just seasoned with a little olive oil, salt, pepper and paprika. I like to bake them at a high temperature so they can come out crispy on the outside and a little soft on the inside.

This side dish will go perfect with any kind of meat for dinner. Make sure you cut the pieces about the same size so they will cook evenly. It really takes 15-20 minutes in the oven at 425 for them to be ready.
Easy Healthy Roasted Sweet Potatoes
- 2 sweet potatoes
- Olive oil
- Salt and pepper to taste
- Paprika *optional
- Preheat the oven to 425 degrees.
- Peel and cut the sweet potatoes all about the same size. Place them in a large bowl and season them according to taste. I like mine with paprika but it is up to you.
- Place them on a baking sheet on top of parchment paper.
- Bake for about 15-20 minutes.
