Our favorite recipe! Healthy Veggie Nuggets are a great snack and/or side dish.  You can make a big batch and freeze some for later.  Try different vegetable combinations like zucchini-carrot or corn-carrot.  Super kid friendly recipe and so delicious!

Perfect finger food for little hands. It is also a great way to get kids to eat more veggies. I use a good quality silicone mold, the Freshware 15-Cavity Mini Half Sphere Silicone Mold and makes it really easy to bake then let it cool down and the nuggets come right off!

We absolutely love these healthy veggie nuggets!

Healthy Veggie Nuggets

Healthy Veggie Nuggets
(makes about 15 nuggets)

Ingredients:
1 Egg
1 cup broccoli
1 cup cauliflower
1/2 cup bread crumbs
1/2 cup shredded cheese
Salt (optional)

Instructions:

Steam or boil broccoli and cauliflower, drain and chop. If you are feeding a baby or small child you can also blend the vegetables so they are easier to eat.

In a bowl mix it with the rest of the ingredients and place them in a baking sheet or mold pan. My Freshware 15-Cavity Mini Half Sphere Silicone Mold is perfect for this recipe and makes 15 delicious nuggets.

Bake for 15-20 minutes at 375.

We wanted to make these nuggets more fun so with some pretzel sticks we made a caterpillar!
