I am super excited to share with you this Simple 6 Ingredient Mushroom Ceviche. Easy to make, healthy, and so delicious!

Simple 6 Ingredient Mushroom Ceviche

This ceviche recipe only requires six basic ingredients to throw together. Just a few minutes of preparation and you can have the perfect appetizer. It’s so yummy!

I am a HUGE ceviche fan. Yes, I am Peruvian and I have to love ceviche. My whole family loves it. Even my 2 year old toddler. But sometimes it is hard to make it at home. It is hard to have fresh fish fillets or seafood always available. So I decided to make a vegetarian version with the help of some wonderful mushrooms.

I am really in love with this Simple 6 Ingredient Mushroom Ceviche recipe. You taste the same traditional ceviche juice flavors but with only vegetables. This will be the perfect way for vegetarians and vegans to enjoy the true ceviche experience. Yum!

The lemon juice together with some olive oil, cilantro and garlic makes it so enjoyable and healthy. And the raw mushrooms are simply perfect.  I love cooking with simple and healthy ingredients!

This recipe is really the easiest to make (ready in 10 minutes or less), and the flavors are just great. It is really perfect for a light appetizer or as a side dish. If you love Peruvian ceviche, you are going to also love this mushroom version. Guaranteed.
