This recipe is so simple, so healthy and so delicious. And the kids LOVE it! I wonder how I ever survived without it.

All it takes is about 5-10 minutes and 2 healthy ingredients: banana and eggs.

When I first saw this recipe, I could not believe you can actually make pancakes with just bananas and eggs.  No flours, and no artificial ingredients, or sugar.  My kids love these pancakes!  They are so easy to make, and an excellent option for a healthy breakfast.

You can make a big batch and freeze them for later too.  What a great way to start the day with real and healthy ingredients. Stay away from processed pancakes and make your own.  You will feel good about eating real food and offering your kids homemade delicious treats for breakfast.

Want to add more nutrition?  You can serve them with fresh fruits on top like berries and also your favorite nuts.

These pancakes are sweet enough plain but if you like, add a little honey or maple syrup on top. Easy to make, super healthy recipe for breakfast, snack or even dessert.

Serves: 4
  • 1 large ripe banana
  • 2 eggs
  1. Mash the large ripe banana with a fork or masher (if you have one).
  2. In a medium size bowl, mix the eggs and then add the mashed banana. Mix everything together well.
  3. Put a little bit of oil in a pan, (I recommend coconut oil, about ¼ teaspoon) on medium/high heat. When hot, pour a small amount of mixture (I recommend making small pancakes so they are easy to flip).
  4. When the pancake starts to rise slightly (usually about 1-2 minutes) , flip it over and cook the other side.
  5. Ready.
